Red Beet Salad:and Orzo and feta cheese Salad



Red Beet Salad

Beet lovers will enjoy this fabulous, easy-to-make salad that serves 10.

Be sure to make the salad two hours before serving.

2 lbs. Red beets

4 oz onion, cut into fine strips

3 oz sherry vinegar

2 Tbsp. Dijon mustard

1 Tbsp. honey

Sea Salt

Freshly ground pepper

Boil beets in salt water until tender. Let them cool a bit, then peel. Cut beets into quarters and slice each quarter into bite size pieces.

Combine onions, sherry vinegar, mustard and honey.

Toss warm beets into dressing. Adjust seasoning with sea salt and freshly ground pepper.

Let salad rest for two hours before enjoying



Orzo and Feta Cheese Salad

This colorful salad serves 10 and is a perfect complement to any meal.

2 cups cooked orzo

1 cup cherry tomatoes, cut in half

1 cup red pepper, finely diced

1 cup cucumber, finely diced

1 yellow tomato, seeded and diced

24 Calamata olives, cut in half

3 oz. crumbled Feta cheese

2 tsp. dried oregano

1 Tbsp. extra virgin olive oil

2 Tbsp. fresh lemon juice

Kosher salt and white pepper to taste

Combine all ingredients. Adjust seasoning with salt and pepper.
