Tuna Tartar
4# Sushi grade tuna minced
1 cup mayonnaise
¼ cup sesame oil
1 cup shallots fried and minced
¼ cup cilantro minced
½ cup kimchi paste
2 tbsp sambol oulek
¼ cup chives
Salt and pepper to taste
Mix together all ingredients but the tuna. Fold in the tuna and keep very cold.
Wonton Chips
Cut the wontons into triangles and fry till crispy.
Wasabi oil
Mix 1 cup wasabi with 2 tbsp water to form a thick ball.
Blanch and shock .5# of parsley.
Puree the wasabi and parsley with 1 qt of vegetable oil and let rest for one day.
Strain thoroughly.
