Baked Tilapia with banana fruit salsa





Baked Tilapia with banana fruit salsa:

1 banana mashed

3 large ripe tomatoes

½ teaspoon chili flakes

1 mango chopped

1 cup fresh cilantro

3/4 cup red onion chopped

1 red bell pepper seeded and chopped

3 limes juiced

1 teaspoon sugar

6 fillet tilapia

Salt and pepper

Olive oil

In a blender mix tomatoes, chili flakes, lime juice, sugar and cilantro blend until smooth.

Combine banana, mango, onion and red bell pepper in a bowl. Cover and toss with tomato puree.

Heat large deep frying pan. Pour in enough olive oil to coat bottom of pan. Lay tilapia side by side. Sprinkle with salt and pepper. Cover with salsa, cover pan. Cook till tender (a couple of minutes). Serve either warm or room temp.
