Grilled Shrimp Skewer, Israeli Arugula & Parmigiano Reggiano “Cilindro “

Ingredients:
1 Cup of Parmigiano Reggiano
1 cup of Israeli Arugula
1 red, yellow, orange pepper
3 U7 heads on shrimp
1 wooden skewer
½ red onions
1 tsp of red pepper flakes
1 clove of Garlic
2 TSP Lemon juice
2 TSP EVOO
Salt, Pepper
Procedure:
1. On sheet tray with parchment paper, shape a rectangle with the parmesan
2. Bake it until light brown
3. While hot, shape around any kind of Cylinder like utensil ( large Tabasco bottle)
4. Combine EVOO, lemon Juice, Salt & pepper, this is very simple dressing but it’s the best.
5. Rinse & dry the Arugula
6. Julienne 1/3rd of each pepper
7. Clean the shrimp and marinade it with Garlic , red pepper flakes , EVOO, Salt, pepper & lemon juice
8. put on the skewer & the red onions , grill it
9. Toss Arugula & dressing
10. make a simple red pepper Coulis
11. plate like showed above
