Poached Lobster and Salsify Salad



Serves 4


1- Fresh 2# Lobster Lightly Poached
Clean and Reserve Claws For Tempura Batter and Garnish for Plate. Cube Tail and Knuckle Meat and Toss with Lemon Olive Oil Salt, White Pepper and A touch of minced Shallots.


1# - Fresh Salsify Peeled Grated (Toss with a touch of lemon to keep Color)
Mix with Fresh Mayonnaise, Bumpy Mustard Salt & Pepper, Minced Shallots and Fresh Chives

Pea Tendrils for Garnish tossed lightly with Aged Sherry Wine Vinaigrette


Use Blanched Yellow and Green French Beans for a Petite Side Salad to Finish Plate


For Tempura Batter: 1 Cup AP Flour, ½ Cup Rice Flour, 11/2 Tablespoons Baking Powder Salt, Pepper and Fresh Herbs. Whisk together with Club Soda until Batter is of a thin consistency.
