The Inn at Perry Cabin is a popular and highly regarded hotel in beautiful St. Michael’s, Maryland. The inn sits right on the Chesapeake Bay shore and its restaurant features terrific water views.
On a snowy January day, the menu featured a delicious Alsatian Tart. As you can see, this entrée is layered and includes ingredients that are true to the Alsatian region where France and Germany share a border. The tart’s bottom layer is a puff pastry that has been brushed with a bacon and onion paste, then cooked until golden brown. Tiny bits of bacon and onion are visible and add terrific flavor. On top of the puff pastry rests a confit that includes shredded duck meat, cabbage, pea shoots and thin slices of Granny Smith apples. The tart is topped off with is a nicely seasoned home made pork sausage.
